I made Old Fashioned Pudding Pie from Vegan Pie in the Sky. Easy and good! (and I added mini-marshmallows from Sweet and Sara).­

I used this recipe:­ It just wasn't very lemony because all I used was a teaspoon of store-bought lemon juice. But I thought it was pretty good the way it was anyway.

I made Indian Shepherd's Pie from Quick Fix Vegan by Robin Robertson (and I replaced the russet potatoes with sweet potatoes and left out the oil and salt)

I made the Better-than-the-Classic Sheperd's Pie from the Vegan Slow Cooker by Kathy Hester (page 95). I used Yves Sausage crumbles and I added frozen peas about a half hour-hour before the end of cooking.

For the mashed potatoes I used 2 red potatoes (skin on!), 1 celery root and 3 parsnips.

Mine was a no-recipe pizza. I spread crushed tomatoes with basil on pizza dough, sprinkled on garlic powder, oregano, a little more basil, parsley, and a little red pepper. Drizzled a little olive oil. Added thinly sliced onion & mushrooms, small pieces of broccoli florets, and black olives. Topped with Daiya mozzarella. Baked at 450F for about 25 minutes.
