My father bought me Jonathan Safran Foer's book "Eating Animals," and I knew after I finished it that my life would never be the same. I love animals too much to sit back and do nothing to help and protect them.
The avocado! (Although it's technically a fruit.) Broccoli and cucumbers come in a close second.
I'm currently making the transition to vegan, but it hasn't been as difficult as I expected. I thought I would madly crave cheese, but I have found even more delicious substitutes.
I'm a life-long vegetarian (well, on and off) who made the switch to vegan in early 2010. Love it so far, but having a hard time meeting like-minded individuals. My Italian family still looks at me funny when I turn down Parmesan cheese!
