Hi Renee,
All of our breads are low-gluten because we use a wild yeast starter (sourdough) and not a commercial yeast. But the lowest gluten bread is definitely the Old World Miche. That's made with the organic high-extraction flour and the sourdough starter, which is allowed to ferment for several days which actually breaks down the gluten making the bread super easy on the digestive system. Our gluten-intolerant customers are happy with it & tell us that this is the only bread they can eat! But if you do have celiac's disease, then definitely avoid the breads, including the miche. I hope this helps, Chamain
