Influenced by Diet for a Small Planet, Laurel's Kitchen, and Molly Katzen(Moosewood Cookbook), I became vegetarian when I first came to start thinking about what made sense - ethically, healthwise, and environmentally. Found it harder to become vegan but I couldn't any longer accept the disjoin between what I knew/believed and practiced. Happy to have made the commitment!
All sorts - but I'm not a great/inspired cook so potluck contributions would be simple.
