1 1/2 cups almond milk
1 medium banana
1 tbsp. cornstarch
1 tsp. vanilla
2 cups pureed or mashed cooked pumpkin (or cushaw or winter squash)
1/2 cup rice flour (or flour of your choice--not whole wheat)
2 tsp. baking powder
3/4 cup sugar (we used stevia instead)
1/4 tsp. ginger powder
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ground cloves
1/2 tsp. salt
Preheat oven to 350 F. Pour into pie crust or not- it's a very custard-like pie if there's no crust. Bake for about an hour, let it cool all the way till it sets.
It was an odd texture but delish.
