Lecture: Protein in Vegan Diet

Hands-on Demos: Green Smoothie, Cabbage Salad with Creamy Cumin dressing, Potato Cakes, Kidney Bean and Basil Pie, Zucchini with Cilantro Sauce, Strawberry "Cheese" Tart

Cost: a suggested $5-10 donation per person.

Note: the recipes demonstrated and used for samples are vegan, and gluten-free (or at least wheat-free), peanut-free, caffeine-free, and excitotoxin-free. They can be adapted for people with other allergies, so let me know if you would like to come, but try to avoid a certain food, such as soy, walnuts, citrus, etc.

Please also note the day of the week change for the cooking class,

from 3rd Tuesday to 3rd Sunday of the month!!!

    I am so sorry that my sister and I won't be able to attend. I was called in to work this weekend! I hope someone will be ok eating our portions, I am so sad to miss out I loved jerk cooking before going veg and really wanted to see how to make it! :(

    This is one of our last class' favorites. Enjoy!


    Jerk cooking is a Jamaican way to grill meat and seafood, and all food considered “jerk” has a characteristically sweet and spicy sauce. This tofu is also delicious cold, packed into lunchboxes or snatched from the refrigerator as a snack. 2 cakes of firm tofu (12 to 14 oz)

    Jerk Sauce

    1 medium onion, coarsely chopped (about ½ cup)
    3 fresh green chiles, seeds removed for a milder hot, or just use sweet bell pepper
    3 tablespoons soy sauce
    ¼ cup lemon juice
    2 tbsp. brown sugar
    2 tsp. grated fresh ginger root
    2 garlic loves, minced or pressed
    1 tsp. dried thyme
    1 tsp. coriander
    ½ tsp. dill seeds

    Combine the jerk sauce ingredients in a food processor or blender and puree until smooth. Preheat oven to[masked] degrees.

    Drain and slice pressed tofu, then dip it in in the marinade. Bake for 1 hour in a parchment paper lined pan, carefully turning the tofu about every 20 minutes.

    According to the note avoid soy, walnuts and citrus in what we bring, I just want to verify. I am also new to the area relocated for work and am also looking forward to meeting fellow vegans. Where are the cooking classes?

      Lorena was saying that if you have allergies to certain foods, to just let her know. She brings all the food for the class. The classes are at the Seventh-Day Adventist Church, 4545 Country Club Rd. You can google the address or see map above. They are actually held in the white building behind the church (Bennett Family Life Center).

    Hi I'm a new member and not familiar with the different activities offered. Is this a cooking class where we all cook or watch someone else cook? Also is there any way to find out what foods will be made? Thanks! I'm very excited about meeting fellow vegans in Winston Salem!

      We usually all help out - chopping, mixing, etc. Lorena Stephenson teaches the class and presents a short health lecture. After we cook, we get to eat! :) And we get to take the recipes home. Lorena should be adding the dishes and health topic to the write-up soon.
