1&1 Hosting phpMyAdmin Setup - Create Database in MySQL

I am a newbie web developer and would like assistance on how to use the phpMyAdmin feature to create and setup the MySQL database.
I am unable to access and use the back end (command line) to create a database (plenty of tutorials to setup) however, I am not familiar with MySQL to set it up on the 1&1 Hosting- phpMyAdmin Setup GUI.I have contacted 1&1 Hosting customer service and unable to get much guidance and have reviewed their limited MySQL and phpMyAdmin tutorials. 

1. Build a static database with a member's information and preferences.
2. Create databases to integrate with the main static database.
3. Link , store, delete and update the databases using html form to format a GUI to manipulate the databases.(if feasible)
