    This is an older plant, past the taste-good stage. If one were starving to death, they could harvest and boil and pour off the water to remove rankness. The tender young leaves are nice raw or cooked. The sour quality is from oxalic acid. Eating this plant as a regular vegetable in the diet is not advised, as the oxalic acid contributes to the formation of kidney stones.
