    This is amaranth. Varieties of it have been used for grain production. Tiny seeds are shaken or beaten out of the seed heads. The seeds need to be ground or cooked into a gruel to have nutrition for humans. The leaves make great mild cooking greens. This plant keeps its good flavor as it goes towards flowering, unlike many of the edible weeds.
