Those of you who know me know I am from San Antonio. Those of you who know me know that I love Tex-Mex the local cuisine of San Antonio. Those of you who know me know I hate LA Mexican food. Those of you who know me know I hate going downtown.
That being said there is a new Tex-Mex restaurant downtown that has the balls to charge $11 for puffy tacos, $22 for a chicken fried steak and $30 for 1 lb of fajitas. It has me intrigued since it's by the owner of Baco Mercat, which has been highly praised. Expect me to be highly, highly critical but come and join me and let's see what LA "Tex-Mex" is all about.
About B A R A M Á
Fideo and borracho beans with cilantro and pork belly simmering on the stove, the spicy warmth of menudo every Christmas and New Year’s, egg salad with a fried egg between a butter toasted bolillo, and puffy tacos stuffed with lengua carnitas and crushed avocado and doused with pequin chile vinegar salsa. These are just some of the dishes that have inspired me – the food that I was nurtured with by the women who raised me. Bar Ama’ is my interpretation of their Tex-Mex.
