Angel Hair Pasta and Marinara Sauce
Page 395 in Alissa Cohen?s ?Living on Live Food? book.
3-4 zucchini (room temp)
(Manganese, Vitamin C, A & K, Magnesium, Fiber, Potassium and Copper)
2 1/2 cups Tomatoes (Vitamin C, A & K, Molybdemum, Potassium, Fiber and B1)
1/4 cup Extra Virgin Olive Oil (vitamin E)
4 Cloves Garlic (manganese, B6 and vitamin C)
1/8 tsp. Cayenne (vitamin A,C & B6, Manganese)
12 Sun Dried Tomatoes, soaked (an hour)(vitamin content same as tomatoes)
1 tsp. Pink Himalania Salt (potassium, Calcium & magnesium)
2 tbls. Parsley (vitamin K, C & A, Folate & Iron)
3 Dates, Pitted and soaked (an hour) (Folate, vitamin A & K)
For Angel Hair Pasta:
1. Spiralize the zucchinis in the Saladacco on the angel hair pasta setting.
2. Pour angel hair zucchini pasta into a large bowl.
For Marinara Sauce:
1. Place all of the Marinara sauce ingredients into food processor and blend until smooth.
2. Pour sauce over angel hair zucchini pasta and serve.
Try topping with capers and yellow tomatoes for a beautiful
look. I like to top it with Alissa?s Mozzarella Cheese.
