France because that's where the rest of the world finds it's benchmarks. (Although I hate the classifications.) (Anything old world, old vines.)
I prefer good wine over mediocre. Red or white doesn't matter, depends what you are eating.
I have a sweet tooth, so I love finding lesser known, esoteric dessert wines for beautiful pairings. (Commandaria, 8yr Hannahato, tokimeki harushika, late harvest monastrell (bodegas Olivares), great PX from Spain, sparkling shiraz, umeshu, tokaji)
To develop my palate through tastings. As a sommelier, you can spend several lifetimes learning and still not know anything.
