Making Prickly Pear Cactus Jelly

C'mon everyone, let's make Cactus Jelly! Saturday, August 17th at 10:00am. If you have been to my other classes, you know they are fun. Olives, Yogurt and now... Prickly Pear Cactus Jelly. I will send out necessary supplies (for those that sign-up) on Wednesday.

    To make this more fun, ...everyone is Invited to bring cheese, crackers, wine, a vegetarian or meat tray to share. I have wine and will have some other stuff, but it is best if everyone participates. Ice and soda is also helpful. Just give me a call if you would like to contribute, but are not sure what to bring.     PV area is good but really for the savings in gas for some it's better to go to Cave Creek Diner!!!!!Close by and veryyyyy reasonable and the food is very good!!!! Let's go there!!!!What ya think Rocky?????

      I will be sending it out to everyone later today. I would like to get as good a head-count as possible, so I know the numbers. If you, (or anyone else) know of any other possible participants, I would like to get 10 people if possible. This makes the party that much more fun!

    O.k., I said that I would send out a list of necessary items for the production of Prickly Pear Jelly. You will need; A large metal or glass Mixing Bowl ...that is not to big to fit into your Freezer. (The larger the better). A Colander that fits snugly (the same size with no legs...) inside the bowl, Cheese cloth... (you can pick this up at any Grocery Store). Tongs (with good handles and a wide, good grip to pick the Prickly Pears), Pectin (again, at any Grocery Store), and 3 to 6 cups of Sugar. You may also want to purchase fruit (or fruit juice) s/a Lime, Lemon, Apple or Orange, Apricot, or Pineapple ... or vegetables ...s/a Jalapenos or Habanero peppers, or Carrots... to help you develop the flavor. These things you DO NOT need to bring with you on Saturday. I will do the demonstration and show you how I cook. Instructions will be provided. Thanks. I look forward to seeing everyone!

      I forgot two things to put on your list... 1. you will need a 6 or 8 qt sauce-pot to cook in and 2. A couple of Jam Jars. Enough to put everything in. If someone wants to bring some Cream Cheese and Crackers, I will be opening up a jar I made (a while back) to enjoy.

      I would like to show everyone how to pick and go through the entire process, (so fresh). I will do it like I did the Yogurt. Mostly directions and a small amount of demonstration. People will have to do their final project at home. Hope this helps to answer your question.
