I started making cheese at home several years ago. While I've since bought many other cheese making books and resources, but I always return to Ricki Carroll's Home Cheese Making book for clear, easy to follow recipes.
This year, I began leading home cheese making and artisan cheese making classes this past year. Several group members inquired the listing for my classes in the various Community Education class catalogs around town. So, I thought, why make the cookbook club go to a Community Education class when I could lead a cheese making class at my house? So, here it is.
This meetup will be a bit different than our usual Cookbook Club Potlucks. No need to bring a dish, and no posted recipes. I will provide everything required for the class including samples and drinks. The fee goes to off-setting the costs and my time.
Using recipes from Ricki Carroll's Home Cheese Making book, I will lead the group through making ricotta, queso blanco, and paneer. We will also make a shared batch of mozzarella and everyone will get a chance to stretch a mozzarella ball. In between curds and whey separating and cheese draining, we will also discuss and sample cheeses and accompaniments through an all New England artisan and homemade cheese board with a glass of wine.
Everyone will leave with cultures to start a cream cheese or fromage blanc at home.
