We'll be tasting and discussing fine olive oils and sharing our experiences of awakening and delight. We'll get to know some of the hundreds of varieties -- some common, some not -- and the different tendencies and flavor profiles contained within each.  Olive oils can be grassy, fruity, pungent, bitter and spicy. We'll learn where the various varieties are grown and perhaps some of their history. We'll explore how to properly assess and use an olive oil, and how best to match a particular dish with the right oil. Generally, we'll have a lot of fun with this ancient food that is such a vital part of the Mediterranean diet, explore why it's under-appreciated in the US, and finally put it into the context of human history, culture and cuisine.
