Sunday Brunch Potluck

Enjoy a Sunday brunch vegan potluck with the veggie group! Coffee/tea to be provided to start the morning out right. This will be a brunch potluck so feel free to bring a breakfast or lunch dish. This event is sponsored by Vegetarian Society of Colorado.

What to Bring:

* A plant-based dish (no meat, fish, fowl, gelatin, dairy, eggs, honey or other animal derived products)- serving size 8 (Per Person). Ideas for types of morning dishes to bring: fruit, tofu scrambles, potatoes, toast/bagels and jam, coffee cakes,or even orange juice. ( Include in comments when you know what you will bring).

* A Recipe or ingredients card

* Plate, cup, mug (if you want coffee/tea) and utensils (To cut down on waste)

* Also bring your IDEAS (thoughts/suggestions) for potlucks for the new year : )

We will be collecting a small donation (what you can afford) to help with expenses to run this group. All donations go directly to the Vegetarian Society of Colorado.

    Wayne Lambert's "out-of-cans" vegan chili:

    2 15 oz. cans Hormel Vegetarian chili (with beans)
    2 15 oz. cans Kuner's pinto beans
    2 10 oz. cans Rotel Original diced tomatoes and green chiles
    1/2 cup TVP granules (Bob's Red Mill, Whole Foods)
    1 small white onion, chopped
    2 teaspoons canola oil
    1 teaspoon ground cumin
    approx. 1 cup water to thin as desired.
    Boil and simmer till TVP granules expand (about 10-15 minutes)

    Good for a cold night or a camping trip.
    For a really cold night use the hotter version of Rotel.

    Cooking Pot Stickers and Dipping Sauce

    For cooking:
    In a hot non-stick pan, coat with oil or spray with cooking spray and place dumplings. When bottom gets brown, add 1/4 to 1/3 cup of water and immediately cover. This will steam the dumplings.
    They should look translucent at this point. Carefully watch the dumplings and completely evaporate the water so that the bottom gets crispy again and sticks to the pot. Can use a spatula to go under to loosen them if stuck to the pan too much so they don't tear.

    Serve with dipping sauce.

    SPICY SOY DIPPING SAUCE:


    1/3 cup thin soy sauce
    1/3 cup rice wine vinegar
    1/3 cup sliced scallions
    1 teaspoon sesame oil
    1 tablespoon sambal ( I omitted )
    Combine all.

    A bit time consuming, but easier to make than I thought they would be.

    Directions for Vegetarian Pot Stickers

    Directions
    In a wok or large saute pan, add a little oil and saute onions and ginger. Add the mushrooms and stir. Add the cabbage, carrots and chives. Season. When mixture is soft, place in colander to drain. Add the sesame oil and cilantro or parsley when mixture is cooled. Check for seasoning. Using the gyoza skins, make half moon dumplings keeping the bottom flat. There are many videos on the internet to show how to pleat the wrappers. I moistened the wrapper on just half of the circle with water and a little corn starch mixed in.

    Some sites suggested once the pot stickers are formed to refrigerate them. I placed them on a cookie sheet with sides and lined with parchment paper and covered with plastic wrap. I kept them in the refrigerator over night and then cooked them the next day. They could also be frozen at this point for using later.

    Vegetarian Pot Stickers
    Recipe Courtesy of Ming Tsai
    Show: East Meets West With Ming TsaiEpisode: Dumplings
    Yield:
    20 to 24

    1 red onion, chopped
    1/2 - 1 tablespoon minced ginger (I used 1/2 tbsp)
    1 cup sliced shitake mushrooms, chopped
    1 cup white cabbage, shredded
    1 cup carrots, shredded
    1 cup chopped garlic chives or chives
    1 teaspoon white pepper
    1 teaspoon sesame oil
    1/4 cup chopped cilantro or parsley (I used parsley)
    tofu, optional
    chopped water chestnuts, optional
    1 package round dumpling skins, also called gyoza (preferably twin dragon brand)
    Salt to taste 1/2 tsp
    water chestnuts, chopped (optional)

    Square won ton wrappers have egg in them; the round gyoza wrappers do not have egg and can be purchased at Asiana Market on 5740 Carefree Circle N or Asian Pacific Market on 615 Wooten Rd.
