I reached 310 lbs and a 54" waist, which plunged me in to a severe almost manic depression. Then, with the loss of my job in 2009, I decided to start by just taking away some of the bad and attempting to incorporate more of the good. The take-aways became more prominent with no sugar & no artificial sweeteners followed by no junk food as the start, then came no starches, no gluten, no red meat, no dairy, no pork, no chicken, no fish, and finally no cooked or heated foods a short while ago. I can now proudly state that I have finally went under the 200 lbs marker and have managed to slip in to a 34" waist size as well as going from a 19" neck down to a 16" size. I still have a long way to go both physically and emotionally - but all in good time!

I love making dishes that incorporate many elements of textures, such as creamy, crunchy, and bursting with flavor. Additionally, I enjoy kicking my dishes up to the "Hot" category - as in muy caliente (food kind and not referring to people). Finally, I love to experiment with exotic fruits, such as young Thai coconuts, longan, jack fruit, dragon fruit, etc.
A fairly newbie to the raw food world as I just went completely raw this year. Still experimenting and attempting to find the correct fit.
