I'd be delighted to hear of any tools you find, but also a bit
surprised if they do a very complete job.  Ruby is dynamic, so
even simple-sounding things (like knowing which version of a
method responds to a message) are not always trivial.

Anyway, I'd start by looking at YARD and yard-graph, an add-on
which generates class diagrams.
