How to Break Down a Duck & Use All Its Parts

A chef that I work with over at Eat Tribal has agreed to do a demo for us on how to break down a whole animal - something smaller, like a duck, but open to feasible suggestions.

He'll go over breaking down, how best to use its different parts, getting the most yield, and anything else we want to cover.

We're currently looking for a place that can host this (if you know one, reach out to [masked]) and want to gauge everyone's interest.
