At Empellón Cocina chef/owner Alex Stupak uses the richness of Mexican foodways as his launch pad for creative menus that are always evolving and deeply personal. Stupak and his team embrace experimentation and the thinking through and toiling over dishes that excite them and that will keep adventuresome foodies coming through the door. I dined at Empellón when it first opened in 2012 and was utterly delighted then. By all accounts Stupak’s feats of Mexican-inspired culinary magic continue to dazzle.
