Red Butte Hatch Chile
Beautifully layered like Entrada Sandstone of the American Southwest, this cheddar is tumbled with Hatch chiles, then rubbed with a spice blend that balances creamy and smoky with a proper balance of heat. The coriander in the rub on the rind gives a mellow lemony undertone.
The buttery cheddar rubbed with rosemary becomes lively with snappy, citrus-like fruity notes. It warms your tongue and leaves a subtle note in your mouth with a hint of rosemary.
Modeled after a Holstein cow’s spots, this cheddar is rubbed with Regalis Black Truffle Carpaccio, honey and truffle salt, giving it a savory nose of earthy truffle tones and a delicious mushroom finish.
To get rich, elevated umami (re: savory) flavors, this cheddar is hand-rubbed with porcini mushrooms, which imparts earthy notes throughout the cheese.
