Come to the January Thaw Healthy Meet Up in Johnson City!

Well, we made it through the Holiday Season once again!  I hope all in tact!  It will be great to start a whole fresh New Year.  Happy New Year to you all!  I am glad that each of you are part of this very special Meet Up Group!

This month we will host Dr. Phil Collins.  I am so excited to have him come to us from North Carolina.  He has a doctorate in Health Science and has an office in Asheville where he sees patients concerning taking care of themselves Naturally.  Nutritional and Lifestyle care at its best.  He is very intelligent on the subject and welcomes your questions.

This particular time he will address B12 issues, protein needs and Vit. D.  This should be very interesting as these are the primary concerns with vegan and raw food diets.  You can bring your questions as he will have a question and answer time.

I will update you more on Dr. Phil Collins and what he does.  He is a lively and interesting speaker.  Well renouned speaker and educator.  To have him here is a blessing!

This month we can focus on color in our food. So, bring something bright and colorful to brighten up the winter!  Think Reds, oranges, greens, blues, purple, white, yellow!!

    Complete Health Improvement Program is getting ready to start Feb 9. Free information sessions are this week Thursday and Sunday at 2pm in the fellowship hall. This program reinforces the lecture Dr. Collins gave last night. Bring a friend that is interested in learning about improving their health and then support each other through the program.

      The classes will be at 11:30 during the noon hour. Lunch will be serve each day. It will be like taking a college course again, we meet Monday, Tuesday and Thursday for the first 3 weeks, then Monday and Thursday. Graduation is on Sunday March 16 so you can bring your friends to help you celebrate your success.

    Fruity Wild and Brown Rice Salad

    Cook with 3 1/4 C water
    3/4C wild rice
    3/4C brown rice
    rince under cool water

    1C raisins
    1C chopped dried apricots
    1 1/2 C halved red seedless grapes
    2/3C chopped chives (I used about 1/2C)
    1/2C chopped parsley
    1 1/2 C coarsely chopped toasted walnuts ( I used pecans)

    Dressing - blend
    2 small lemons juiced
    1/4 C olive oil
    4 tsp honey
    1 small handful of fresh meant leaves
    1/2 tsp salt

    These are the portions I used last night. If you want to halve it used 3/4C of each, already cooked rice. Then halve the rest of the recipe

    Bob [my non-vegan husband] and I had such a great time at our first meet up in December. The food was great, the demonstrations, tips and recipes marvelous, but best of all were the wonderful people we met. Bob was really shocked at the number of men attending and the number of those around our age! And he loved the food!
    I made "virgin vegan" goodies for Christmas. The "cheese"dip was a real hit. My daughter-in-law who ADORES carrot cake and says exactly what she thinks declared mine from the Forks Over Knives cookbook delicious. The golden raisins really made it moist. I made carob balls rolled in nuts, coconut, and [off vegan] crushed candy canes for friends who really enjoyed them.
    But I did make a rookie mistake with Nancy's carob iced cheese cake - I didn't realize that the dates I put in the crust with the pecans and walnuts weren't pitted! Everyone was very gracious about it and no one had to go to the dentist!
