Name at least three of your favorite cuisines

I really like all types of food but a few favorites are Thai, Japanese, Italian, Spanish (Tapas)...

What is your favorite vacation spot?

I've traveled quite a bit but don't have a spot that I return to regularly as I try to visit new places. However, a few of the most memorable locations are Thailand, Japan, Germany, Italy and Australia.

Describe the most memorable meal you've ever had

This was in Japan in Nagano prefecture at a remote onsen (natural hot springs) that was very traditional Japanese. After soaking in the hot springs that were surrounded by snow covered trees and mountains, the inn keeper made a multi-course meal that is popular in that region. It was cooked in a "fire pit" in the middle of the room and we watched her cook while we ate for a couple hours.

What is your cooking level? Beginner, intermediate, advanced, professional, etc... and which type of cuisine is your specialty?
