What kind of bread do you like to bake?

I bake a country style round; 70% unbleached, organic white bread flour and 30% stone ground whole wheat with 75% hydration. Sometimes I add "extras" like walnuts, currants, olives and such but mostly I make it plain.

Are you a beginning, intermediate or advanced baker?

I guess I am advanced since I am a slave to my starter. It goes with on vacations when possible and if not, the dog sitter learns to feed it.

Long time "do it from scratch"enthusiast. I am an organic farmer, cook and baker, I collect and read cookbooks of all kinds. At the moment I am baking bread about every 5 days.
