The menu consists of the following:
Fresh Ricotta, Fresh Goat Cheese & Two Tomato Sauces
Chef Phil has created a cheese course to celebrate the life of his Grandmother, Olga, with an offering of fresh ricotta from milk sourced from Calder Brothers Dairy in Allen Park, MI and goat cheese from Traffic Jam & Snug. Accompanying this will be a duo of fresh tomato sauces using delicious late season tomatoes from Grown In Detroit and Garlic Ciabatta from Avalon International Breads.
Field Greens & Croquettes
The salad course is a tribute to the chef’s mother, Carolyn, that is composed with pea shoots and baby arugula from Brother Nature Produce with a Honey Vinaigrette featuring Eight Mile Honey from Green Toes Garden. Complementing the salad will be field produce from Grown In Detroit and a Smoked Salmon Croquette for our omnivores.
Field Greens & Smoked Tofu Croquettes (Vegetarian)
The tofu is produced by Ken from Michigan Soy Products in Royal Oak.
Trio of Granitas
This course, dedicated to the chef’s nieces, Monai, Christina, and Maria, is three granitas created from that local favorite, Faygo. Enjoy Orange, Grape, and Red Pop as a palate refresher before your main course!
Braised Short Ribs & Yukon Golds
This meat and potatoes course created for the chef’s wife features a sweet and spicy braised Vernors’ short rib nestled on a velvety bed of pureed Yukon Golds from Grown In Detroit, with hoisin-glazed carrots, pickled serranos, and caramelized onions. Our grass-fed beef is from C-Roy Farms
Braised Seitan + Yukon Golds (Vegetarian)
Locally -produced Seitan from Mama Mo Foods, Munith, MI.
Sweet Potato Cobbler & Ginger Gelato
Chef takes locally-grown sweet potatoes and gently roasts them until they are meltingly delicious, and serves them with homemade ginger-laced gelato spiced with Ras El Hanout, topped with streusel made with Westwind Milling organic flour. This course is dedicated to the chef’s daughter and an exciting new direction in his food!
CHEF PHIL JONES IS DONATING A PORTION OF THE DINNER PROCEEDS TO SAFE, AN ORGANIZATION DEALING WITH DOMESTIC VIOLENCE.
