Vegetarian Quesadillas for Brunch!!
With Cactus al chipotle, peppers and mushrooms.
This dish is not to be missed in any Mexican house it is very simple to make and it taste delicious. Quesadilla is flour or corn tortillas filled with different meat or vegetarian toppings and cheese, which it’s the basic ingredient of the quesadilla.
The quesadilla name comes for the combination of both cheese “queso” in Spanish and “tortilla” which means literally tortilla with cheese. The tortilla is folded in half forming a shape like a moon, usually cook in a griddle (Comal) until the cheese has melted.
You can eat quesadillas any time of the day but in Mexico it is usually eaten in the morning for breakfast accompany with re-fried beans and chili sauce.
