What is your history with fermentation or what are you interested in learning about?

I have been a devotee of Sandor Katz for many years. My experiments include kombucha, kimchi, fermented grains, essen bread, sour dough, pickles, yogurt, kefir, cheese and sauerkraut. I am also passionate about natto and would love to learn how to make that especially using other beans.
