What is your history with fermentation or what are you interested in learning about?

I learned about the Bokashi Method of composting 2 years ago, in which you ferment your compost. That has kind of started my interest in fermentation. I have started to make my own sauerkraut and fermented drinks and am looking forward to learning much more about it.
