Yikes it's Spring

I will be doing a few "last minute" herbs walks as certain plants emerge. Plants change as they age and are only good to pick at certain times. Some of the Spring edibles must be harvested when young which means ya gotta be ready to jump when the plants first poke up. I just posted for Japanese Knotweed, and will try to keep ya'll posted on Pokeweed which should be in another 1 - 3 weeks. The Ostrich Fern, Matteuccia struthiopteris, will likewise be putting up their famous and delectable fiddle-heads very soon.  I can't predict when these guys will sprout, so stay on your toes! The Japan Knotweed is sprouting now, probably fiddle-heads next then poke weed. I'll try to keep you posted and schedule last minute hikes to let people have the opportunity to harvest some of these natural freebies.
