Ever since I started cooking Keto I've wanted to recreate the 'chicken in a bucket' experience. Kelly and I are opening up our home to the NL Keto Meetup group for this extraordinary event!
As we've done for the other Keto Minifests, 4 to 5 pm is happy hour where everyone meets, shares a beverage (wine, low-carb beer, seltzer, or Zevia) and appetizers (something yummy).
At 5pm I'll demonstrate how to make the dishes, which will be served at 6pm.
First of all, there's the fried chicken, deep fried in lard with a crispy pork rind coating and a special blend of herbs and spices!
The mashed potatoes and gravy will go WAY beyond the bland spud flakes you get at the red-and white box place. It's a mash made from roasted cauliflower and garlic. The gravy is made from chicken bone broth. Plenty of that peppery flavor that you know so well.
What would this experience be without a cold crispy coleslaw? I've faithfully matched the flavor profile of the original.
Of course we'll have biscuits!
Finally, there'll be a chocolate parfait for dessert with layers of chocolate mousse, whipped cream, and a buttery nut crumble.
At 7pm we'll have live Q&A with guest speaker Amber O'Hearn, who will join us on Skype to talk about her experiences with the carnivore diet.
After that, just hang out and make some new friends!
