We will provide cups, napkins, plates, and utensils, but you should bring your own containers if you want to take home leftovers. Keto recipe exchange: If you like, bring along a few copies of the recipe for any dish you’re bringing. Set them out where people can pick them up. I’m sure many of us are on the lookout for recipes we’d like to make. Carl will not be with us as he is traveling, but we are truly looking forward to seeing everyone!! Dinner at 5pm.     Chaffles (cheese waffles) are the latest keto food to go viral on social media, and for good reason! They are delicious! We're going to put out all the fixins, and let you build your own chaffle burger. You can even cook your own burger if you want!     Ketoky Fried Chicken Meetups have been THE most popular, so why not do it again in the dog days of summer? This time, I'm going to sous vide the chicken (thighs and legs) in the spice mix for 3 hours at 155F before deep frying for only 3 minutes! This way, you'll taste the BEST fried chicken you've ever had fresh and hot. From 4 to 5 PM is happy hour where everyone meets, shares a beverage (wine, seltzer, diet soda, or water), artisanal cheeses and charcuterie. At 5 PM I'll demonstrate how to make the dishes, which will be served at 6 PM. First of all, there's the fried chicken, deep fried in beef tallow with a crispy pork rind coating and a special blend of herbs and spices!     At Ketofest, Daddy Jack's will be serving Carlshead pizza, but we have to make the crusts! So, we're hosting a Carlshead pizza crust making party at RD86 on Monday, July 15 from noon to 6 pm. I (Carl) will be there. It is as much of a social gathering as a crust-making session. Bring your favorite pizza toppings and we'll all make our own pizzas. Bring anything else you want to share. Be prepared for lots of keto conversation in the RD86 kitchen! There is only room for 12 people, and admission is free.

    What happens when you seal up chuck roast in a bag with olive oil, garlic, thyme, salt, and pepper; cook in a water bath at 135F for 48 hours, and then sear in a cast iron skillet? Magic! The flavor of chuck as tender as filet mignon. Carl served this amazing beef at the VIP party for Ketofest 2017 and 2018. Dr. Eric Westman will make a remote appearance, and Carrie Brown, the new Keto Dudette, will be there in 3D!
