  • Morrocan Smoked Lamb Minifest with Nina Teicholz

    Ring in the spring with lamb! Carl cooks up an all-day-smoked leg of lamb with Moroccan spices and keto hummus with a fresh Greek salad on side. Happy hour (4 PM to 5 PM) is when everyone meets, shares a beverage (wine, seltzer, diet soda, or water) and some yummy charcuterie and cheese. At 5 PM, Carl will demonstrate how to make the dishes which will be served at 6 PM. The main dish is a leg of lamb generously rubbed wtth Moroccan spices that's been smoking all day - served with a roasted cauliflower and garlic hummus tahini that will blow your mind! The lamb is served with a fresh Greek salad with feta, olives, oregano, and a tangy Greek dressing. Of course, there will be some amazing Mediterranean red wine to accompany this delectable dish.     Tapas is one of Carl's favorite food experiences. A "tapa" (Spanish) is a small plate. "Tapas" means small plates, plural. Come enjoy some extremely flavorful tapas as well as Spanish Rioja wine. Ole! We have TWO special guests that will call in after dinner: cardiologist Dr. Nadir Ali, and the inimitable Dave Feldman! The topic is saturated fats, cholesterol, and heart disease.   • Keto Minifest at Carl's House! Sous Vide Chuck Steak and Dr. Eric Westman!

    What happens when you seal up chuck roast in a bag with olive oil, garlic, thyme, salt, and pepper; cook in a water bath at 135F for 48 hours, and then sear in a cast iron skillet? Magic! The flavor of chuck as tender as filet mignon. Carl served this amazing beef at the VIP party for Ketofest 2017 and 2018. Dr. Eric Westman will make a remote appearance, and Carrie Brown, the new Keto Dudette, will be there in 3D! From 4 to 5 PM is happy hour where everyone meets, shares a beverage (wine, seltzer, diet soda, or water) and some yummy charcuterie and cheese. At 5 PM we'll demonstrate how to make the dishes, which will be served at 6 PM. First of all, there's the sous-vide beef.     Come beat the Winter blues at RD86 Space on Saturday, December 15th from 4 to 9 PM. There is no agenda except to be together in this amazing keto-friendly restaurant and enjoy each other's company. PLEASE RSVP so we can plan. Lately I've been hosting all-inclusive Keto Minifests and doing all the cooking. This time I'm going to leave the cooking to someone else so I can spend more time talking to my keto friends. There is no fee, so you will be on your own for dinner. We'll put out a free meat and cheese board, and they have a full bar. Chef Robert has some amazing braised meats, steaks, roasted veggies, and oopsie bread with garlic butter. You don't need to bring anything. Now is Saturday 11/17 Since the first Ketoky Fried Chicken Night, where I recreated the 'chicken in a bucket' experience, was such a hit, I decided to do it again! From 4 to 5 PM is happy hour where everyone meets, shares a beverage (wine, seltzer, diet soda, or water) and artisanal cheeses. At 5 PM I'll demonstrate how to make the dishes, which will be served at 6 PM.   • Brazilian Steakhouse Experience Keto Minifest

    Have you ever been to a churrascaria such as Fogo de Chao or Texas de Brazil? If so, you probably remember what they call "top sirloin." The Brazilian name for this cut of meat is Picanha (pik-KAHN-ya). It is also known as the rump cap. It has a nice layer of fat on the outside. It's skewered, salted, and grilled over intense heat just enough to cook the outside layer. You serve the outside layer cut thin, then re-salt, re-grill, and repeat.   • May Keto Minifest with Carl Franklin at RD86!

    This is the second Keto Minifest we've held in New London, home of Ketofest (http://ketofest.com). Last month's Minifest was a blast, an experience second to none! The evening starts with happy hour. Appetizers and drinks are served from four to five. Everyone gets 2 glasses of wine, otherwise it's a cash bar. Mixologist extraordinaire Thor will also demonstrate you how you can make some of his over-the-top keto cocktails at home. We'll have some amazing appetizers. From five to six Carl will be demonstrating how the dishes are prepared. In every case, he'll simplify them so you can cook them at home. Chef Robert is on-hand to demonstrate classic cooking techniques. As mentioned, Thor will demonstrate how to make one of his keto cocktails. Dinner is served at six. As of now, the planned menu is bacon-wrapped lamb chops with an amazing lemon/ garlic/ rosemary/ olive oil sauce, which will (of course) be served as the main dish along with brussels sprouts broiled in olive oil with bacon and bordelaise sauce. A small arugula (rocket) salad will accompany the dish. We want to have a generous basket of cloud bread (oopsie bread) with soft garlic butter on every table. Oh yeah! The dessert we have planned involves home-made ice cream and chocolate sauce. After dinner at around seven, we will be treated to a Q&A session with Dr. Ken Berry, author of Lies My Doctor Told Me. If you've never been to one of these meetups, we're family. Expect to make new life-long friends. Things are happening in New London, and you're part of it!

  • Keto Minifest! Dinner and Q&A with Richard Morris and Carl Franklin

    This is a very special meetup! Richard Morris (my 2 Keto Dudes podcast co-host) and I will be cooking for YOU at the RD86 space. Richard is going to make his sous-vide salmon with crispy salmon skin and fennel salad. I'm cooking braised short ribs with a roasted cauliflower au gratin and sauteed spinach. For dessert, a keto eclair! Keto libations will also be available. RD86 used to be the Spark Makerspace, and before that it was the El & Gee club. This is where the cooking demonstrations from Ketofest were held last year, and will be held again this year. Now, it's a complete production kitchen and restaurant. For this event we have a very special feature. We're going to have a live remote Q&A session with Dr. Ken Berry!You'll get to ask questions and get answers. Megan Ramos will also grace us with her remote presence! This is a great opportunity for anyone in this group to get some face time with the greater ketogenic community.
