About Class 
In this interactive class, you will learn how to make a Salmon en Croute with Trio couscous salad and dill cream sauce. Fresh Salmon fillet covered by wilted spinach and creamy cheese mixture in puff pastry served with trio couscous and lemony dill sauce. Pinot Grigio will be a great paring for this dish. 

Ingredients 
S&P for seasoning 
1 sheet puff pastry Cheese mix - Cream cheese 50g 
3 Dill sprigs 
Lemon juice - 1 table spoon 
Goat cheese 30g, soft ripened 
Couscous salad – Trio couscous 50g 
¼ of each bell pepper ( Red, Orange, and yellow) 
Avocado ½ ea 
Dill cream sauce – 4 Dill sprigs 
6 floz vegetable oil 
10 floz whipping cream 
1 ½ Tablespoon lemon juice 
3oz grated parmesan cheese 
2 tea spoon white sugar
