Bacon Wrapped Jalapeno Poppers

20 largish jalapenos
1 block good cream cheese
4 oz of grated sharp cheddar
5-10 slices of bacon

Pepper jelly for serving

Wash and dry jalapenos. Cut them in half with the stem on (trim the stem if it's very long). Cut along the membrane and then scoop out the seeds with a spoon.

Combine softened cream cheese with grated cheddar and fill the jalapeno halves flush with the sides. If you heap the cheese in, it will just overflow and make a mess. Cut your bacon slices either into halves or quarters, depending on the length of the slices. I used quarters. Wrap a piece of bacon around each jalapeno half. You can secure with a tooth pick if you like.

Bake in a oven preheated to 375 for about 30 minutes - keep an eye on them. You want the bacon to be fully cooked.

Serve with warmed pepper jelly.

Coconut Rice by Sandi


2 cups jasmine rice
1 cup lite coconut milk
2 cups water
1/2 tsp salt
1/3 cup coconut that has been toasted on the oven or stove top
1/3 cup golden raisins
some chives or green onions

stir rice in rice cooker with water and coconut milk
when rice is cooked stir in toasted coconut, raisins and chives
