I usually find recipes easy to follow, but when it comes to raw stuff I would like to be able to know the tips and hints which I feel I would get out of the workshops.

I was travelling through the south of France, one night I ended up at this very small back alley place which served THE best food I have ever eaten in my life!
Just getting into raw foods, very keen to learn more.
