Sunny Blueberry Corn Muffins (modified)
Vegan with a Vengeance - Isa Chandra Moskowitz

1 cup all purpose flour
1 cup cornmeal
1 tbsp baking powder
1/2 tsp salt
1/3 cup sugar
1/2 cup canola oil
3/4 cup almond milk
1 tbsp lemon juice
1/2 tsp vanilla extract
1/2 tsp lemon extract
finely grated zest of 1 lemon
1 1/4 cups blueberries

Preheat oven to 400 degrees. Lightly grease a 12 muffin tin.

In a large bowl, sift together the flour, cornmeal, baking powder, salt, and sugar. In a separate bowl, whisk together the oil, almond milk, lemon juice, vanilla, lemon extract, and lemon zest. Fold the wet ingredients into the dry. Gently fold in the blueberries.

Fill each muffin cup 3/4 full. Bake for 20 minutes until a toothpick inserted into the middle of one comes out clean.
