Tasty and nutritious, microgreens are making their way from restaurants and markets into family kitchens. Microgreens, the early stages of greens such as lettuce and broccoli, are even younger than mesclun salad greens. While mescluns first appeared in produce stores 25 years ago, microgreens are even newer. In this workshop, Mark will demonstrate a clean and cheap technique for indoor gardening of microgreens that is adapted from that of professional farmers. Participants will sample many varieties of microgreens. Mark is the author of “Sprout Garden: Indoor Grower’s Guide to Gourmet Sprouts,” and his articles about sprouting have appeared in magazines such as Vegetarian Times, Natural Health, Vegetarian Gourmet and Vegetarian Voice.
