Have you gotten excited about fermented foods yet?  This time of year all sorts of common but aggravating illnesses are going around - from the bad colds to the serious strep. While you don't have complete control over your immune system, you can certainly protect yourself with germs.  Yes, germs! You need specific probiotic bacteria to keep you healthy. These bacteria can be found in fermented foods.  You can make them at home instead of spending money on expensive prescriptions or the farmers markets.

If you missed the class I just gave on fermentation, I will teach one specific fermentation class for the meetup next month: Kombucha.  The class will be Thursday Dec 6th from 6 - 8 pm.  I will teach you how to make this fun and ancient drink that will boost your digestive system and immune health.  You can sign up through our meet-up site HERE­


Why am I excited about fermented foods?  Well they taste good of course.  But I am interested in their science too.  Modern science now believes that your immune health directly correlates to the health of your gut bacteria.  Just check out the "Germs are Us" article in the recent October 22nd Issue of the New Yorker for several examples. The article discusses a UCSF Study on how certain probiotic bacteria were singularly able to rid patients of painful sinusitis.

A healthy digestive system absorbs and processes nutrients easily, and moves waste through quickly. Without healthy bacteria in your gut, your body has trouble in a variety of ways.  For example, a recent study gave mice antibiotics which killed their healthy gut bacteria.  Without the digestive bacteria, the mice absorbed more calories from their food then their counterparts eating the exact same thing - and then they became obese!  The science of food, especially bacteria, is super interesting!
Do you have a healthy digestive system?  Do you feel protected from common illnesses, or is your digestive system in a bit of trouble? Science has yet to come up with many answers about what we can to to protect our health.  Reducing exposure to antibiotics is one possibility.  Another is you can take probiotic pills.  But there is a general feeling that probiotic pills may be as much hype as help.  In the absence of science, I stick with common sense.  Fermented foods are probiotics.  And, there are dozens of unpasteurized fermented foods available to us in our own kitchen.  Let's make some together!
