Carrot Cake (Submitted by Helen)

Carrot Cake

Ingredients:

2-1/4 cups all purpose flour
1 tsp baking powder
2 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
4 heaping tablespoons of Arrowroot powder
2/3 cups apple sauce
1-1/2 cups sugar
1 cup vegetable oil (I used light olive oil)
1/2 cup "buttermilk" (1/2 cup soymilk with 1-1/2 teaspoons white vinegar)
2/3 cups firmly packed brown sugar
2 tsp vanilla extract
1/2 cup crushed pineapple, drained
1 pound grated carrots
1 cup chopped walnuts
1 cup golden raisins

Directions:
Preheat oven to 350 degrees F.

Line two 9-inch cake pans with parchment paper, lightly coated with oil.

Mix flour, baking powder, baking soda, cinnamon, and salt together in a bowl.

In a separate bowl, mix sugar, oil, "buttermilk", brown sugar, arrowroot, vanilla, pineapple, and apple sauce together. Toss in the flour mixture and mix well. Gently stir in carrots, walnuts and raisins and then pour the batter into the prepared cake pans.

Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool before taking the cake out of their pans and adding frosting.

Frosting:

16 oz of your favorite vegan "cream cheese" (I used 8oz of Toffuti and 8oz of Galaxy Nutritional foods veggie "cream cheese")
4 oz of Earth Balance margarine
2 tsp vanilla extract
1 tsp almond extract
3 cups confectioners sugar

Mix "cream cheese" and margarine together until smooth. Add extracts, mix, then gradually add in the confectioners sugar and mix until smooth. When cakes are cooled, slather the frosting over one cake, place then the second cake on top of it, and slather the rest on. Enjoy!
