The tea we selected this week, Prairie Sky, is a Hunan fu-cha. It is simple, ordinary and earthy, and thus associated with the wisdom of earth and wood. It also has a herbal identity: people boil this tea, arguing that it opens the body’s channels and centralizes the flow of Qi, and it has been traditionally consumed throughout the Himalayas and the plains of Asia.
We will have a few brew and boil the tea to taste the difference in techniques. The tasting will be accompanied by Comte cheese from France by Marcel Petite.
