July Fourth Fling!

I suddenly realized I don't have any plans for this Saturday--which is July 4th! If you don't either, well heck, wanna come over for an easy-peasy good time? You're invited to drop in anytime after 3 pm...I don't know exactly when the fun will wind down, but I expect some of us will still be eating/playing games/dancing at least until 9. The weather forecast says: "Mix of sun and clouds. Highs in the upper 70s and lows in the low 60s." (The pool is available for adventurous souls--who don't mind that the water temperature is currently 73...) Many hands make light work! Here are some ways you can contribute... - Bring (& then wash) your own durable ware--plate, utensils, cup. That way, I'll have less to clean up afterwards. [I'll provide washable cloth napkins.] If you forget, no prob, I'll have enough for you. - Bring your own folding chair--or picnic blanket-- *or* your own towel to cover one of the grimy plastic outdoor chairs I have! (I'm sorry they're so grimy. I've heard that bleach would do the trick, but I've been reluctant to go that route...maybe I should...I can't make up my mind...) - Bring whatever you'd like to drink, if you'll want something OTHER than water. I'll provide unlimited tap water, and ice. - If it makes you HAPPY to contribute some food, great! I tend to worry there won't be enough food, though it usually turns out there's more than enough. If it would STRESS you out to prepare something, then don't. You can always help defray the cost of the dogs, buns, & ice cream. My plan is to offer an easy vegan picnic menu, but if some of you want to go more gourmet/more healthy, let's talk--we could coordinate some marinated skewers over rice... I can't do all that by myself, would need some help. So if you'll want more than hot dogs and ice cream, your contribution is welcome. Here are some other dishes I think would be great to have (and depending on how many RSVPs come in, and how much time I have, I may make some of them myself)--
curried potato salad baked beans (recipe below)
broccoli salad
raw kale salad or more elaborate
kale salad
grated carrot salad
three bean salad (could substitute sweetener of your choice...)
couscous salad Now here's a question I'm wrestling with--my understanding is that charcoal grilling is a more environmentally-damaging way to heat food than some alternatives. Is it okay with you if I don't fire up the grill? When you rsvp, please weigh in if you have an opinion about using the stovetop to boil/steam, using the oven to broil, or using the microwave oven to heat. How to contact me? If I don't see you, hope your holiday is a happy, healthy, and safe one. :) Yours, Jennifer Doctored baked beans recipe--double to serve 8, triple to serve 12 2 cans organic baked beans, or plain Great Northern beans (might want to increase the sauce if using plain beans) 1 Tbs yellow or dijon mustard 2 Tbs barbecue sauce or ketchup or tomato paste or some combination 2 Tbs maple syrup 1 small-to-medium onion, chopped & sauteed Combine all ingredients in oven-safe dish, bake at 350 until bubbly (anywhere from 20 - 60 minutes)
