I never liked Almond Milk...until I tasted homemade.

WOW! Amazing! Rich and creamy, flavorful, and healthy to boot! However, I resisted making it because: 1) Almonds are expensive; 2) I thought it must be difficult; 3) I believed it had to take special equipment.

I was so WRONG!!

It's affordable and easy-peasy to make. Only 1 cup of almonds makes a quart of almond milk. That means that homemade is also less expensive than buying the commercial brands that are more watery and full of additives.
Just look at the "junky" ingredients in these top-selling brands:
--Almond Dream
This company has mostly Rice and Soymilks but has a single unsweetened Almond milk.
-Ingredients: Almond Base (Filtered Water, Almonds), Sunflower Lecithin, Tapioca Starch, Tricalcium Phosphate, Carrageenan, Sea Salt, Gellan Gum, Natural Flavors, Vitamin A Palmitate, Vitamin E (D-Alpha Tocopheryl Acetate), Vitamin D2, Vitamin B12.

--Blue Diamond Almond Breeze
Products include: Original (7g sugar per cup), Vanilla (13g sugar), Chocolate (20g sugar !) Unsweetened, Unsweetened Vanilla. They also have chocolate flavors.
-Ingredients (original): Almond milk (Filtered Water, Almonds), Cane Sugar, Calcium Carbonate, Sea Salt, Potassium Citrate, Sunflower Lecithin, Gellan Gum, Vitamin A Palmitate, Vitamin D2, D-Alpha-Tocopherol (Natural Vitamin E).

--Simply Nature Almond Beverage (Aldi's Organic Almond Milk)
-Ingredients: Organic almond milk (filtered water, organic almonds), tricalcium phosphate, sea salt, potassium citrate, organic locust bean gum, gellan gum, organic sunflower lecithin, vitamin A palmitate, Vitamin D2, d-alpha-tocopherol acetate (vitamin E).

There are definitely undesirable ingredients, i.e. gums, artificial vitamins, sugar, tapioca starch, tricalcium phosphate, and carrageenan.

Without the gums, they are watery because they often contain only 2% almonds. Homemade almond milk is around 20% almonds. That's 1 cup of almonds to 4 cups of water.

Real, homemade almond milk is almonds, water, optional dash salt, optional sweetener (I use 2 dates) and an optional flavoring (I use a teaspoon or so of vanilla).

And, if you use an instant pot to soak the almonds, it takes even less time. The flavor of homemade almond milk is mind-blowing. I like vanilla, but you can have plain, chocolate, chai, coffee, butterscotch, strawberry, or any tasty goodness you want.
