### Dearest Treasures of Indigo Hill, Soon to be Dabory (多寶里)!

Hello, our cherished hiking friends!
The year 2025, which felt like it flew by with a mix of challenges and achievements, is now winding down. This year, we witnessed a magnificent new chapter in South Korean democracy, and navigated the enormous wave of AI—some losing ground, others seizing new opportunities and pressing forward. It has truly been a grand and dynamic year!
We, the people who shared the spirit of Hiking, laughing and shedding sweat together, are hosting a small but heartfelt Year-End Party to celebrate these precious bonds. We want to momentarily hold onto the tail of this fleeting year, look into each other's eyes, and share some genuine, warm camaraderie.
Thank you so much for all the love, support, and truly memorable moments we’ve shared this year. From our challenging hikes to our simple celebrations, every moment spent together has been a journey filled with deep meaning and joy.
As the year-end approaches, we aim to create a warm and joyful space where we can look back fondly on the past 12 months and welcome the next one with great hope. We are by no means professional party planners, so please excuse us if things aren't perfect—but we promise a sincere evening overflowing with good company and amazing energy!

### 🎉 Major Events: Eat Your Heart Out, Sing Your Lungs Out!

  • Dinner Feast: Let's untie the big knot of stories we've collected this year over a delicious meal!
  • The Epic Karaoke Riot: After dinner, brace yourselves for the 'Karaoke Riot Hour'! This is where we will sing our hearts out and blow off all the stress that has piled up. Let's send the old year packing with a blast of noise!

## 🍖 The Delicious Allure of 'Oneun Jeong Jjok-Galbi' (Ribs)!

'Oneun Jeong Jjok-Galbi' (오는 정 쪽갈비), often referred to simply as Oneun Jeong, is located near Euljiro-ipgu Station in the Da-dong/Mugyo-dong Food Culture Alley in Jung-gu, Seoul. This place has firmly established itself as a mecca for office workers and food lovers solely based on the strength of its signature menu: Jjok-Galbi (Pork Spare Ribs). It's a cozy spot often whispered about as a 'hidden gem known only to locals' where you can enjoy a truly special style of pork rib.

### 💖 The Charm of Jjok-Galbi: The Joy of Tearing, the Delicious Seasoning!

Oneun Jeong's signature Jjok-Galbi is distinctly different from typical Korean pork ribs (Samgyeopsal or standard Galbi).

  1. The Primitive Pleasure of Tearing the Meat: The dish uses the meat attached right next to the rib bone. This maximizes the primitive pleasure of grabbing the bone and tearing the meat off by hand. There's a satisfaction that's hard to describe when you put on a plastic glove and sink your teeth into the tender meat clinging to the bone.
  2. The Perfect Harmony of Sauce: The Jjok-Galbi here is known for its sweet, yet deeply savory seasoning (a common feature in Korean BBQ sauce). It's not just overly sugary; the seasoning perfectly harmonizes with the smoky, rich flavor imparted by the charcoal grill. Many describe it as the feeling of tearing into high-quality marinated Galbi, bone and all, making it enjoyable for all ages.
  3. A Balance of Juicy and Chewy: The meat is neither too dry nor excessively tender, offering a satisfying chewiness (texture). The outside gets slightly crisp from the charcoal fire, while the inside remains wonderfully moist—a true delight.

### 🍚 Unmissable Side Dishes and Pairings

The true value of a great meat restaurant often lies in its side dishes, and Oneun Jeong is also famous for its neat, delicious, 'home-style' Banchan (side dishes).

  • Tangy Green Onion Salad (Pajae): The refreshingly seasoned green onion salad is the perfect counterpoint, cutting through the sweet marinade and smokiness of the ribs. It's an indispensable partner for the meat.
  • Individual Soybean Paste Stew (Doenjang-guk): Popular even as a standalone lunch item, the deep, savory Doenjang-guk (soybean paste stew) is served in an individual earthenware pot. It offers a comforting, 'mom-cooked' feeling that nicely grounds the meal. Pairing it with the ribs makes for a hearty dining experience.
  • Fluffy Steamed Egg (Gyeran-jjim): The soft, fluffy steamed egg helps neutralize the sweet and slightly spicy kick of the Jjok-Galbi sauce, completing a well-rounded meal.

### 📢 Quick Note: Hike Attendance is Optional!

If you can't make the Inwangsan hike, but would still love to join the dinner party, please don't hesitate! You are more than welcome to come—we greet you with open arms!
