John and all,
I certainly applaud Le Perigo's decision to discontinue foie gras. I did do by the restaurant the other night to check out their menu and only saw one vegetarian item, an entree that was made with butter (I agree with Charlotte, the French certainly like their cheese and butter).
I'll be very interested to hear whether the actual crepes in the "vegan crepes" at the French Marketplaceon Gay Street are vegan . It's not hard to make good vegan crepes (I will post a recipe this weekend), just not very traditional.

First allow me to whole-heartedly endorse (based on my thus far limited patronage) Just Ripe, a new eatery and produce mart next to the new indy bookstore in Knoxville, Union Ave Bookstore. They are not completely veggie, as the lamented Veg-O-Rama was (lamented mostly for that reason), but they seem to lean heavily veggy, with a number of vegan items. They also have fresh squeezed juices. A great place to tank before or after a workout at the nearby YMCA.

Secondly, I think we should at least give Le Perigo a chance. They have eliminated paté de foie gras from their menu, and I think that act should be recognized and rewarded. They have one vegetarian entrée on their menu, all French cuisine, that looks very appealing.
