My favorite Vegan and Gluten Free home cooked meal was cubes of peeled eggplant and baby spinach cooked in stewed tomatoes, garlic, pesto, salt & pepper and olive oil, served over polenta accompanied by a glass of white Zinfandel.  Yummy!!

Hi all,

Let's play a little game that I'll call "My Favorite Vegan Meal...". You post a short description of your currently favorite meal (or meals), and everyone gets to learn what fun things you are eating and where you are eating them. I'll collect the postings over the next week, and the most interesting post will be awarded a Food Fight! sticker from Portland Oregon's great vegan grocery.


I'll get things started:


My favorite vegan meal this month (where?) at the French Market Bistro on Gay Street is:

Vegan buckwheat crepes stuffed with spinach, artichoke hearts, tomatoes, and hummus, washed down with strong French coffee.



My favorite vegan meal this month (where?) at home is:

Moroccan Tagine with butternut squash, chickpeas, tomatoes, black olives, cumin, and turmeric, served over couscous, washed down with sparkling water with a squeeze of lime.
