Advice for starting a permaculture at a montessori school

I've been asked to head up a garden project at a Montessori School for pre-k through 8th graders in Augusta, Maine. I'm excited and totally daunted by the task. I'd love to have a focus on wild edibles to tie the project in with a primitive skills club that I run after school and to involve the kids as much as possible. Anyone have any advice for how to begin?
