If you want eggs harvested in a specific way you just need to contact farmers. You might have to sacrifice some of the things you're looking for because of the many situations farmers run into when needing to produce eggs to sell on the market. The ultimate control factor is if you raise chickens yourself for eggs.

Here is a helpful site where they have done extensive research on egg producers. A mix of regional and nationwide companies. I will usually buy from the farmers market because I know it is fresh, and the farmers practice sustainable methods of raising the chickens. So they claim. I'm sure you could drive up to the farm and see for yourself. Plus the price is usually around the same with whole foods or any health food store organic eggs.
