Personally, the "conversation" feature of Gmail sold me instantaneously on the service. It was perfect. And the easy labeling function, which did take a minute or two to get used to since I was stuck in the folder paradigm for a long while -- I'm an inveterate "taxonomist" too :) -- was icing on the cake.

But like I said, you like what you like. If you're a folder man, cool, if you're a tag/label man, cool. Whatever floats your boat.
