I have used several models of iPhone and iPad with local sim and no problem. Any multi band phone from the last 5 years should be the same, it's not the question it might once have been. 

When choosing a network, all will work gone in the cities such as Melbourne but if venturing out (well worth it in such a great country) then Telstra has far more coverage. 

If you don't buy a SIM before you go its very easy to find a Telstra shop. There are lots.

@Andrew: agreed. The whole buying/leasing a handset from a carrier idea is a total ripoff. Get an unlocked GSM handset from any number of manufacturers (e.g. the dual-SIM OnePlus X for ~US$ 200) and be done with it.
