Real Japanese Chef: shojin ryori

In the middle of november, this year again, Mari Fujii-san will be in Paris and she will show some sensational cooking classes about recipes in Buddhist temples.

Several dates available: [masked] of november. This is a great occasion for discovering Japanese Vegan Style of cooking. Cooking was never so spiritual and deep of feelings!

She has got a long experience about and their cooking classes are very wished by a lot of people.

I attended several classes with this wonderful woman and I admire her and his simple recipes, simple but so tasty and good!

"Les recettes enseignées seront adaptées au plat « One Plate » avec sept idées de recettes pour garnir la grande assiette.

De nombreuses dégustations seront proposées pour comparer les différents goûts et pour apprendre les diverses utilisations de chaque ingrédient.

L’atelier est organisé sur la base de la cuisine Shojin : 5 couleurs (équilibre des catégories nutritionnelles), 5 saveurs et 5 façons de cuisiner.

Nous proposons 2 groupes de dates avec des recettes différentes.

A. Thèmes principaux : tofu, kanten (agar-agar), miso
Jeudi 15, vendredi 16 ou samedi 17 novembre, 19h – 22h

B. Thèmes principaux : tofu, algues, konnyaku, shoyu
Dimanche 18, lundi 19, mardi 20 ou mercredi 21 novembre, 19h – 22h

Participation: 43€ (38€ pour les membres du Club Jipango) par atelier.

Déroulement prévu

19h : Ouverture de la porte du restaurant / Accueil (recettes fournies)
19h15-19h30 : Présentation de Mme Fujii et de la cuisine végétarienne des temples zen
19h30-20h : Dégustation et comparaison d’ingrédients variés
20h – 20h30 : Démonstrations de cuisine et explications des recettes et des astuces

20h30 – 21h15 : Préparation des plats et dîner
21h15 – 22h : Questions / réponses avec Mari Fujii (thé et gâteaux servis)

Mari Fujii, qui a reçu l’enseignement de son mari, ancien moine cuisinier Tenzo*, propose des repas familiaux, faciles à préparer à la maison, et ayant pour base la philosophie de la cuisine shojin traditionnelle pratiquée dans les temples.

Elle a publié plusieurs livres sur les recettes de la cuisine shojin. The Enlightened Kitchen est disponible en anglais.

*Titre qui désigne le moine chargé des repas du temple : menus quotidiens ou cérémoniels et bien-être des moines.

    Thanks Barbara! During my first trip in Japan, I stayed at a buddhist temple in Koya-san and tasted shojin ryori and it was very delicious! So I look forward to this class.
    As I'll be out of Paris on 15 Nov, I registered for the class of 21 Nov.
