I love the variety of foods that a vegan lifestyle allows. No longer am I searching for a new way to cook chicken/beef/fish. The possibilities are literally endless and the benefits are life-changing.
While I'm pretty good at whipping up something healthy last minute, my go-to recipe in the summer is a simple gazpacho.
Since learning about a plant-strong diet from the Princeton Whole foods store, I'm convinced that this is a way of life that will allow me to live longer and healthier.
